Whilst the pina coladas here are sublime and some of the best in the Cayman Islands, I have never properly eaten here, aside from the bar snacks. Was it any good? Time to find out…

Ambience & Décor
Coccoloba is attached to the rear of the five-star Kimpton resort and has a beach hut type vibe on the inside, bearing in mind it is totally in the open with no real walls, and just a canvas canopy roof. The main solid wall partitions the bar and restaurant but the noises from both filter in this light and airy space, thus made the vibe in here so relaxed and welcoming.
Service
Service was smart, slick, and good here – it is manned by the hotel staff hence it is so good. Never had a complaint on that front.
Food
Came here for their regular Taco Tuesday. I decided to have two (as the pina colada filled me up!). The Carnitas was the best. This was Crispy pork belly, kimchi, scotch bonnet aioli. The pork belly was cooked so well and crispy. The texture and flavour changes from the tangy kimchi and spicy scotch bonnet to really elevated this dish. All the ingredients I could taste individually and worked well together. The Carne Guisada was nice but not as good. The Chimichurri, patatas bravas, criolla combination for me lacked a little flavour. This needed more chimichurri or criolla to pack this taco with more punch. I have been told the shrimp tacos are also amazing. We rounded off the meal with some delicious cinammon churros.
For my first Taco Tuesday, it was a good outing, and let us not forget, this is a cheap, tasty meal with amazing drinks, cracking beach views and attentive service, I would come back for more. Solid A rating.
